I have been baking tons for both Max and Scott. Here is my favorite. 2 cups of millet flour or gluten free baking mix1 cup of millet or brown rice 1/2 cup applesauce1 tsp baking soda1 tsp xantham gumadd some blueberriesadd enough water to mix or use rice milk or soy milk or almond milk Put the oven on 400 degrees. Then pour a spoon full into the muffin cup and then add some jelly and almond butter or peanut butter and then add another scoop of mix. Then bake for 22 to 30 mins depending on your oven.Of course I do not give Max the ones with almond butter but this is a great muffin for kids or adults on the go. Low in natural sugars, a good carb and a good fat.Does anyone bake and if so, what do you like making?
