When you bake for your family.
I have never baked muffins. I do make healthy protein bars for my hubby but this am I made Max muffins and he loved them. I used a gluten and wheat free baking mix. Then is subsituted apple sauce for eggs and used some extra oil. I added blueberries, vanilla and cinnamon. I baked at 400 for 18 minutes and they were good for the first batch. Now I am going to experiment using different ingredients and then I can have the perfect muffin.
Scott and I are doing a wheat, gluten, soy, dairy and sugar FREE diet for the next 30 days. I have been on this for 2 weeks and lost 7 pounds but I messed up this weekend at two family holiday parties. Damn parties. Damn yummy food. But whatever I will just start over tomorrow.
I knwo you must think we eat nothing but we eat all of the time. I am experimenting with making scott bars with millet instead of oats and they turned out pretty good. It actually makes it fun to see what you can make and what you can substitute. Ah living the life with food intolernaces. Thank God I married somebody who has food stuff like me because if not-that person would be annoyed with the way we eat. One day I will post a day ijn the life of food for Rachel, Scott, Max and princess pug Esther.
